Specialising in Portuguese flame-grilled peri-peri chicken, the secret to Nando’s signature dish, apparently, is that the chicken is marinated for 24 hours in its famous peri-peri sauce, which is made with African bird's- eye chillies. It's then grilled to order (and basted to your taste) over an open flame rather than fried, thereby reducing the fat content.
